Cranberry Oatmeal Bread

- 1 cup old fashioned oatmeal shopping list
- 1-1/4 cup hot water shopping list
- 3/4 cup softened butter shopping list
- 1/2 cup sour cream shopping list
- 1-1/4 cup brown sugar shopping list
- 2 tbsp grated orange peel shopping list
- 1 egg shopping list
- 2-1/2 cup flour shopping list
- 2 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 2 tsp cinnamon or more shopping list
- 1-1/4 cup chopped cranberries (I used dried) shopping list
- 1/2 cup chopped walnuts shopping list
- 1/4 cup sugar shopping list
- 1 tsp cinnamon shopping list
- 1/2 tsp nutmeg shopping list
How to make it
- Preheat oven to 350 degrees
- Grease and flour 2 (8" x 4") loaf pans and set aside
- In medium bowl, combine oats & hot water
- Stir and let stand for 5 minutes
- In large bowl, beat butter and brown sugar till fluffy
- Add oat mixture, sour cream, orange peel & egg, blend well
- Add flour, baking powder, baking soda, salt and cinnamon, mix gently
- Fold in cranberries and walnuts
- Spoon batter evenly into prepared pans and smooth to level
- Combine 1/4 cup sugar, cinnamon & nutmeg together
- Sprinkle over batter
- Bake for 55-65 minutes until bread is golden brown and pulls away from the sides of pan
- Cool 5 minutes in pan
- CAREFULLY run a knife around the edges of the bread
- Remove to wire rack to cool
- Wrap in plastic wrap to store
