Ingredients
  • 1 large or 2 medium turnips
  • 2 eggs, separated
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp brown sugar
  • 1/2 cup breadcrumbs
  • 2 tbsp butter

Directions
  1. Preheat oven to 350 degrees
  2. Peel turnip, cut up into pieces, and boil turnip until tender
  3. Mash turnip
  4. Put your mashed turnip in a large, greased casserole dish
  5. Mix in egg yolks, nutmeg, salt, pepper, brown sugar (I've substituted splenda secretly, and nobody knew the difference!)
  6. Beat egg whites until soft peaks form
  7. Mix in egg whites - this is what makes the turnip lighter than your normal turnip dishes
  8. Smooth turnip mixture evenly over bottom of casserole dish
  9. Melt butter and add breadcrumbs, and sprinkle mixture over top
  10. Bake for 35 to 40 minutes
