Spicy Sauteed Okra Recipe
This is an East Indian inspired okra dish. Serve it hot with Indian bread or steamed rice.

Ingredients
  • 1/4 c. vegetable oil
  • 5 to 10 cloves garlic, peeled and crushed
  • 2 fresh green chilies, finely chopped
  • 1 t. ground turmeric
  • 1 T. ground cumin
  • 3 lb. okra, washed, dried, and ends cut off
  • 1 medium ripe tomato
  • salt to taste

Directions
  1. Heat the oil in a large saucepan. Add the okra, garlic, and green chilies.
  2. Saute over medium heat until browned.
  3. Stir in the turmeric, cumin, tomato and salt.
  4. Cover, reduce the heat, and simmer for 8 to 10 minutes, until the okra is tender, stirring occasionally to prevent the tomatoes and spices from sticking to the bottom of the pan.
  5. Serve hot with Indian bread or steamed rice.

I love okra and these flavors sound delicious together. Do you slice the okra before cooking it, or leave it whole except for cutting the ends off?


Actually, I've never cooked this recipe, it just sounded good and I wanted to add it to my list. I would try leaving the okra whole, otherwise it may get too gooey when you're sauteeing it. Let me know how it turns out!
