Red Curry Beef With Sweet Potatoes Recipe

Serve this tasty dish with either basmati or jasmati rice and the aroma itself will make it good. But it is good and very different.Garnish with some fresh herbs and you have a pretty and zestful combination.

Ingredients
  • 2 tablespoons cooking oil
  • 3 c. beef steak meat
  • 2 cloves garlic, chop finely
  • 1 big onion, slice thinly into rings
  • 3 c. sweet potato, slice into cubes or bit size strips.
  • 2 tablespoon red curry paste
  • 2c. coconut milk
  • 3 pcs. lime leaves
  • salt to taste

Directions
  1. Slice beef into strips or small cubes.
  2. Heat 2 tablespoons oil over medium-high to high heat in a preheated wok.
  3. Stir-fry beef strips for 2 minutes until it changes color.
  4. Add onions and garlic and let saute for another 2 mintues.
  5. Then add sliced sweet potato, red curry paste, coconut milk and lime leaves.
  6. Reduce heat, cover wok or skillet and let simmer for approximately 15 to 20 minutes or until meat is tender.
  7. Remove lime leaves from wok before serving.
  8. Serve red curry beef with rice.

How did I miss this before? I love curry and I love coconut milk! Most of my curry recipes are for chicken, so I'm glad to have one for beef, I'm going to try this one very soon! Thanks.
