This is a great healthy dish for those who hate to diet. It's easy to mix up the veggies and meats and create your own version! (picture from ocregister.com)

Ingredients
  • 1 c. cooked, chopped ham
  • 2/3 c. mozzarella (light string cheese cubed works great)
  • 1/3 c. swiss
  • 3 large Green Chard leaves, chopped (or 3 cups of raw Spinach)
  • 1/4 c. yellow onion, chopped
  • 1 Tbs. olive oil
  • 1 tsp. minced garlic
  • 4 eggs
  • 1 c. milk
  • sea salt
  • pepper

Directions
  1. Heat olive oil and garlic in large skillet over med/high heat.
  2. Add onions and chard, saute until leaves are wilted.
  3. Place in baking dish. (No need to grease or spray dish, olive oil from cooked chard will coat the bottom)
  4. Top with ham and cheeses.
  5. In separate dish wisk eggs, milk, a dash of salt and a dash of pepper together.
  6. Pour egg mixture over ham and cheeses.
  7. Bake, uncovered at 350 degrees for 40 min.
