Coffee Cream Cheese Frosting Recipe

This is a versatile frosting recipe, and the flavoring can be easily modified. Modified from a standard recipe found at allrecipes.com

Ingredients
- ½ cup Butter, softened
- 8 oz Cream cheese
- 4 cups Powdered sugar
- 1 teasp Vanilla
- Instant Espresso powder
Directions
- Beat together softened butter and cream cheese until smooth.
- Gradually beat in powdered sugar (sift first if possible).
- Dissolve a tablespoon or so of Instant espresso powder in the vanilla and add it to the frosting.
- Add espresso powder to taste directly to frosting beating well. Refridgerate for at least 5 minutes (maybe longer) to allow to stiffen up before frosting.
- For cake filling: Melt 2 oz (or squares) of unsweetened chocolate. Take out ~1 cup of the frosting and mix with the chocolate. It will be thick. Spread between cake layers

A bite of this beautiful cake...and sip of fresh ground, brewed organic Mexican coffee...another bite of the cake...two sips of the coffee...a bit of conversation...another bite of cake...followed by another sip of coffee...THIS is the only "alter-ANYTHING" I can think of in relation to this gift of flavor!
