Nancys Yams Recipe
This is my friend's recipe for her Thanksgiving yams. It's a little different from the usual yam casserole.

Ingredients
  • Canned yams
  • 1 Cup orange juice
  • 1 tablespoon cornstarch (heaping)
  • 3/4 Cup brown sugar
  • cinnamon
  • ground cloves
  • nutmeg
  • 1 teaspoon vanilla
  • salt
  • pepper
  • marshmallows

Directions
  1. Drain juice from canned yams and mash potatoes.
  2. Heat orange juice with cornstarch. Add brown sugar. Cook until it thickens.
  3. Add to mashed yams with the spices. Add vanilla (all to taste).
  4. Put mixture in casserole, and bake in a 350 deg oven for 20 minutes. Top with marshmallows and bake until marshmallows are melted and slightly brown.

This is a yam recipe. I made a mistake with the title and have now changed it. Thanks for pointing it out. :-)
