How to make it

  • Chop up all your vegies, you can rearrange the recipe to include your favourites there really are no rules! Eggplant sort of creates a 'thorn' in the dish to make it more interesting where zucchini and the like will just blend in nicely.
  • Cook your pasta.
  • In a bowl, add your pasta sauce, chilli powder, garlic, salt and pepper, olive oil, and teaspoon of vegeta. Heat this in the microwave for a couple of minutes.
  • In a big frying pan, brown your capsicum, onion, eggplant/alternative, and mushrooms until they are reasonably well done and starting to condense.
  • Then add your tomatoes and spinach, cooking until spinach has cooked down and tomatoes come apart from their skin. For this dish you want the vegies to be really cooked so as to just compliment the pasta not compete with it.
  • Stir in the sauce, stir for one minute.
  • Gradually stir in your cooked pasta making sure to keep your proportions right so you have enough sauce for your pasta and vice versa!
  • Stir gently for one minute on very low heat then serve up!
  • If you really want meat with this one, the humble sausage would go great with it! But the pasta is the star.
