Marvelous Mango Ginger Lime Sauce Recipe
This sauce is low in calories, but rich in flavor. It is excellent over vanilla frozen yogurt. Also can add a few jalapenos, small can of crushed pineapple, makes a salsa too!

Ingredients
  • 2 3/4 cups finely chopped peeled pitted mangoes (about 2)
  • 2 tablespoons sugar
  • 1/4 cup chopped crystallized ginger
  • 2 teaspoons fresh lime juice

Directions
  1. Place 1 cup chopped mangoes in medium bowl
  2. Combine remaining 1 3/4 cups chopped mangoes and sugar in processor
  3. Puree until smooth
  4. Add to bowl with chopped mangoes
  5. Stir in ginger and lime juice
  6. Let stand at least 30 minutes
  7. Can be prepared a day ahead.
  8. Cover and refrigerate
  9. THIS IS A GREAT COMBINATION OF FLAVORS, BE CREATIVE AND USE IN MANY WAYS

You could not have posted this recipe at a better time for me - I had a large, VERY ripe mango just begging to be used. Because of this state of ripeness, I decided not to use the sugar and used fresh ginger instead of candied (also thinking that I might want to use the sauce on something more savory than sweet). It is INCREDIBLE! In about 9 minutes or so I'll be enjoying it with some plain yogurt and am really looking forward to it!
