Ingredients

How to make it

  • Place 1 cup chopped mangoes in medium bowl
  • Combine remaining 1 3/4 cups chopped mangoes and sugar in processor
  • Puree until smooth
  • Add to bowl with chopped mangoes
  • Stir in ginger and lime juice
  • Let stand at least 30 minutes
  • Can be prepared a day ahead.
  • Cover and refrigerate
  • THIS IS A GREAT COMBINATION OF FLAVORS, BE CREATIVE AND USE IN MANY WAYS

    You could not have posted this recipe at a better time for me - I had a large, VERY ripe mango just begging to be used. Because of this state of ripeness, I decided not to use the sugar and used fresh ginger instead of candied (also thinking that I might want to use the sauce on something more savory than sweet). It is INCREDIBLE! In about 9 minutes or so I'll be enjoying it with some plain yogurt and am really looking forward to it!
