I use to beg my mother to make this anytime we had leftover rice from Chinese take out. It is also a very tasty and hearty leftover to have for breakfast.

Ingredients
  • 3 eggs, beaten
  • 1 1/2 c. milk
  • 1/3 c. sugar
  • 1 c. white rice, cooked (cold leftover rice works the best)
  • 1 tsp vanilla
  • Cinnamon

Directions
  1. Mix all ingredients except the cinnamon in a baking dish. (8x8 glass dish works the best)
  2. Sprinkle top with cinnamon.
  3. Bake at 325 degrees for 40 minutes, or until center is set and not runny.
