Shrimp And Scallop Magic Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hanna Estate in Forney, Texas in 1991.

Ingredients
  • 1/2 pound medium shrimp shelled and deveined
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon garlic powder
  • 1 egg beaten
  • 1/4 cup grated Parmesan cheese
  • 1/2 pound sea scallops
  • 1/4 cup heavy cream
  • 2 tablespoons sweet butter
  • 3 strips cooked bacon diced
  • 1/4 cup dry white wine
  • 1/4 cup heavy cream
  • 1 teaspoon tarragon

Directions
  1. Sprinkle shrimp with salt and garlic powder then dip in egg and coat with parmesan.
  2. Sprinkle scallops with additional salt and garlic powder.
  3. Dip into heavy cream then coat with parmesan cheese.
  4. Melt butter in pan.
  5. Add bacon, scallops and shrimp.
  6. Brown on both sides then add wine and simmer 10 minutes.
  7. Add 1/4 cup cream and simmer gently for 10 minutes longer.
  8. Garnish with tarragon.

I made this tonight and I invite you all to try this. It was tweaked slightly because I am not a salt fan and figured there was enough with the cheese. I was right. I make a scampi dish similar
but I think browning the cheese on the scallops/shrimp does make a difference. Not for the cholestrol watcher. A good one to impress guests. Tonight we go light with squash beneath. But still feel it's a treat.
