Pork With Plum Salsa

- 1 pound pork tenderloin shopping list
- olive oil spray shopping list
- 2 teaspoons chopped dried rosemary shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 3 medium ripe plums shopping list
- 2 tablespoons diced red onion shopping list
- 1 teaspoon ground cumin shopping list
- Several drops hot pepper sauce shopping list
- 2 tablespoons chopped cilantro shopping list
How to make it
- Heat broiler.
- Line a baking tray with foil and spray with olive oil spray.
- Remove visible fat from pork.
- Place pork on baking sheet and spray with olive oil spray.
- Sprinkle with rosemary, salt and pepper.
- Place under broiler about 6 inches from heat and broil 10 minutes.
- Turn and broil 5 additional minutes.
- Divide between 2 dinner plates and spoon salsa on top.
- For salsa cut plums in half and remove pits.
- Coarsely chop and place in a bowl then add onion, cumin, hot pepper sauce and cilantro.
- Mix well and serve with pork.
