Pork With Plum Salsa Recipe
Tried and true and very popular in my home. This recipe came from an estate sale. I obtained it when I purchased the family collection from the Jackson Estate in Heath, Texas in 1990.

Ingredients
  • 1 pound pork tenderloin
  • Olive oil spray
  • 2 teaspoons chopped dried rosemary
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 3 medium ripe plums
  • 2 tablespoons diced red onion
  • 1 teaspoon ground cumin
  • Several drops hot pepper sauce
  • 2 tablespoons chopped cilantro

Directions
  1. Heat broiler.
  2. Line a baking tray with foil and spray with olive oil spray.
  3. Remove visible fat from pork.
  4. Place pork on baking sheet and spray with olive oil spray.
  5. Sprinkle with rosemary, salt and pepper.
  6. Place under broiler about 6 inches from heat and broil 10 minutes.
  7. Turn and broil 5 additional minutes.
  8. Divide between 2 dinner plates and spoon salsa on top.
  9. For salsa cut plums in half and remove pits.
  10. Coarsely chop and place in a bowl then add onion, cumin, hot pepper sauce and cilantro.
  11. Mix well and serve with pork.
