How to make it

  • Cut eggs in half and scoop yolks out into a bowl.
  • Cover whites with plastic wrap and refrigerate until ready to stuff. Combine all ingredients together and puree until smooth.
  • Put purée in a large pastry bag fitted with a large star tip.
  • Fill each egg white by squeezing the filling from the pastry bag.
  • Garnish top with curry powder.
