Plum Dumplings

- 15 Freestone plums, pitted shopping list
- DOUGH: shopping list
- 1 1/2 pounds boiled white potatoes (24 ounces) shopping list
- 1 tablespoons salt shopping list
- 2 eggs, beaten shopping list
- 2 cups white flour shopping list
- sugar MIX: MIX AND SET ASIDE shopping list
- 1/2 cup sugar shopping list
- 1 tsp cinnamon shopping list
- TOPPING: shopping list
- 1/2 cup butter, sweet shopping list
- 1 cup fine dry bread crumbs shopping list
How to make it
- DOUGH:
- Peel, grate or rice boiled potatoes.
- Add eggs and salt, mix well.
- Sift in flour and work into potato dough.
- Roll on floured board to 1/2 inch thickness.
- Cut into squares 2 by 2 inches.
- Dough will be very soft.
- Place a square in palm of hand and place a plum in center and add a spoonful of sugar mix into cavity of plum.
- Roll dough around securely, making it into a ball.
- Boil in boiling salted water (salted important) in a LARGE POT.
- Drop one by one into the pot
- Boil 10 minutes or until it rises to the top.
- Drain well.
- Fry the topping by melting the butter and add crumbs and brown a little until golden.
- DROP dumplings into the fry pan with the topping mix and coat.
- Serve immediately.
- Serve with dallop of sour cream and som extra sugar on top.
