This is one of my favorite cookie recipes from when I was a kid. The note on my mom's recipe card says "McCalls - Oct. 1968" So its an oldie but a delicious goodie!

Ingredients
  • 1 - 6oz. pkg. (1 cup) butterscotch chips
  • 3/4 cup butter
  • 2 T boiling water
  • 1 tsp baking soda
  • 2 cups rolled oats
  • 1 cup flour
  • 3/4 cup sugar
  • dash salt

Directions
  1. Preheat oven to 350
  2. In a large bowl combine butterscotch chips & butter & melt in microwave for 45 sec to 1 minute or until smooth. (I updated this from the old double boiler method they used)
  3. In a small bowl mix the boiling water with the baking soda
  4. Add to the butterscotch mixture
  5. Gradually blend in remaining ingredients
  6. Drop by slightly rounded teaspoonfuls onto an ungreased cookie sheet
  7. Bake at 350 for 10 minutes or until tops are set
  8. Makes 4 - 5 dozen
  9. Enjoy!
