Holiday Plantation Pecan And Squash Casserole

- 2 pounds yellow squash, cooked and drained shopping list
- 1 can cream of mushroom soup, undiluted shopping list
- 1/4 cup sour cream shopping list
- 1/4 cup chopped pecans, can toast shopping list
- pinch nutmeg shopping list
- 1/2 sleeve crushed Ritz crackers shopping list
- 1/2 stick unsalted melted butter shopping list
- cayenne pepper shopping list
How to make it
- After cooking squash until tender, drain and mash slightly
- Mix with soup, sour cream, chopped pecans, nutmeg, salt and pepper to taste
- Pour into greased casserole
- Mix crushed Ritz crackers with the unsalted, melted butter
- Top the casserole with the cracker crumbs
- Sprinkle lightly with cayenne pepper, or may omit
- Bake at 350 degrees for 30 minutes or until bubbly around edges and brown on top
- NOTE: this is such a dependable, delicious recipe, and it goes well with so many other dishes. Pimento could be added also, for a little red touch or even some minced red and green pepper!
