How to make it

  • After cooking squash until tender, drain and mash slightly
  • Mix with soup, sour cream, chopped pecans, nutmeg, salt and pepper to taste
  • Pour into greased casserole
  • Mix crushed Ritz crackers with the unsalted, melted butter
  • Top the casserole with the cracker crumbs
  • Sprinkle lightly with cayenne pepper, or may omit
  • Bake at 350 degrees for 30 minutes or until bubbly around edges and brown on top
  • NOTE: this is such a dependable, delicious recipe, and it goes well with so many other dishes. Pimento could be added also, for a little red touch or even some minced red and green pepper!
