It's sweet, it's pumpkin, it's cheesecake! The combination is heavenly!

I have always wanted to try a pumpkin cheesecake! I have everything to make this one too. I knew there was a reason I didn't use my cream cheese for something else yesterday LOL! Thanks.

This sounds so good, and easy, too. Does this make one or two? I only ask because the ingredients say 1 pastry shell, and the directions say to pour the filling into the 2 pastry crusts? Thanks for sharing this one! =)

You can do two 8-inch regular or one 8-inch deep dish. Hope that helps. I'm pretty sure that's how it turned out with mine, it's been awhile when I did this up. I may just have to do it again and make another addition. ha ha ha! We do have the holidays coming so this is a perfect excuse. *grin*

I pulled out my recipe cards and looked again, if you look at #3 it says, Pour the batter evenly into the two pastry shells. So you could choose two 8-inch pie crusts or one 8-inch deep dish pie crust.
About this time of year, 8-inch regular pie crusts are on sale in the grocery store as everyone is purchasing them to make their own pies and everyone usually bakes more than one. We got a replacement oven a few months ago so I'm looking forward to using it. Happy holidays everyone!
