This may sound strange but its really good,also great way to use up leftover beans.

Ingredients
  • 3 cups warm, cooked dried navy beans (1 cup dried beans will make about 3 cups cooked ).
  • 1/2 cup chopped green onions, with tops
  • 1/2 cup chopped parsley
  • 1 tablespoon dried mint leaves, crushed or chopped fresh mint leaves to taste
  • 1/4 cup each olive oil or other salad oil and lemon juice
  • Salt and black pepper
  • 4 large pita breads, white or whole wheat
  • Boston or Bibb lettuce
  • 2 medium tomatoes, cut in chuncks
  • 1/4 lb. Feta or Muenster cheese, cut in chunks
  • Pitted ripe olives, optional

Directions
  1. Put warm beans in medium bowl. Toss wit onions, parsley, mint, oil and lemon juice. Cover and chill. (about 1 hour or longer).
  2. When ready to make sandwiches, spilt pocket breads and ine with lettuce leaves.
  3. Divide bean mixture among pockets. Top each with tomato and cheese chunks.
  4. Garnish with olives, if used. Serve at once.

I know that bean sandwiches are good. Yours sounds even gooder! lol
During the great depression (my parents were young adults) beans were eaten a LOT. Lots of varying casseroles, etc. Anyway, bean sandwiches were not at all uncommon because they are very yummy.
