Indian Pudding 1

- 3 1/2 cups milk, divided shopping list
- 1/2 cup yellow cornmeal shopping list
- 2 eggs shopping list
- 1/2 cup dark corn syrup shopping list
- 1/4 cup dark molasses shopping list
- 1 tsp salt shopping list
- 3/4 tsp ground cinnamon shopping list
- 3/4 tsp ground ginger shopping list
- 2 Tblsp butter or margarine, melted shopping list
How to make it
- Heat 3 of the cups of milk in the top of a double boiler. Mix the 1/2
- cup of the milk with the cornmeal and stir into the warm milk. Cook over
- gently boiling water for 30 mins stirring occasionally. Beat eggs
- slightly in a 1 1/2 quart baking dish; add the syrup, molasses, salt,
- spices and butter. Gradually stir into the hot cornmeal mixture. Place
- dish in pan of hot water, and bake at 350 degrees F for 1 hr or until
- firm in center. Makes 8 servings
