Ingredients
  • 3 1/2 cups milk, divided
  • 1/2 cup yellow cornmeal
  • 2 eggs
  • 1/2 cup dark corn syrup
  • 1/4 cup dark molasses
  • 1 tsp salt
  • 3/4 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 2 Tblsp butter or margarine, melted

Directions
  1. Heat 3 of the cups of milk in the top of a double boiler. Mix the 1/2
  2. cup of the milk with the cornmeal and stir into the warm milk. Cook over
  3. gently boiling water for 30 mins stirring occasionally. Beat eggs
  4. slightly in a 1 1/2 quart baking dish; add the syrup, molasses, salt,
  5. spices and butter. Gradually stir into the hot cornmeal mixture. Place
  6. dish in pan of hot water, and bake at 350 degrees F for 1 hr or until
  7. firm in center. Makes 8 servings

I've tried to make indian pudding so many times and it just doesn't come out right...and I love it. I'll give it another try with this one. Keep your fingers crossed..lol


This sounds very much like the recipe I have. Probably as close as you'll even get to an authentic, Colonial Indian pudding.
