Hobbs Mushroom Burger Recipe
This is a grilled portobello mushroom "burger" served with fresh arugula and a spicy mayonnaise on whole wheat buns.

Ingredients
  • 4 portobello mushrooms, stems removed
  • 5 oz goat chees (can substitute Muenster or Mozzarella)
  • 1 oz. thyme leaves (optional)
  • 2 t. lemon juice, divided in half
  • 2 lemons, sliced thin
  • 4 whole wheat buns
  • 2 bunches arugula
  • 1 T. minced garlic
  • 1/2 c. mayonnaise

Directions
  1. Clean gills from mushrooms.
  2. Combine cheese, thyme and 1 t. lemon juice; mix well.
  3. Stuff seasoned cheese into mushroom cavity.
  4. Grill stuffed mushrooms 10 to 15 minutes; place lemon slices and bread on the grill to heat through.
  5. Combine garlic, mayonnaise, and remaining 1 t. lemon juice. Spread generously onto bun. Add arugula, grilled mushrooms, and grilled lemons to burger.
