Ingredients

1 dozen large eggs

water to cover

a pinch of salt

ice water

Directions

Place the eggs in a saucepan and add water to cover.

Season with a pinch of salt.

Place the eggs and water in pan over medium heat and bring to a boil.

Boil for 2 minutes.

Remove from heat.

Cover with a lid and allow the eggs to sit for 11 minutes.

Drain.

Cool the eggs for 2 minutes in ice water.

Drain and peel the eggs.

--> Things to remember... 1) eggs that are fresh are hard to peel, so use ones you've had for about a week, 2) eggs at room temperature work better than when cold, 3) use a pan large enough so it can hold all the eggs in a single layer.
