How to make it

  • Cook potatoes in boiling salted water just until fork tender but not "mushy".
  • Drain.
  • Whisk together vinegar, oil, mustard, garlic, basil, oregano and salt to taste. Pour over potatoes and toss to coat.
  • Let stand 30 minutes.
  • Add onion and celery. Toss to combine.
  • Serve at room temperature or chill for later use.
