How to make it

  • Preheat oven to 375 F,lightly grease and line the base of a 20cm deep cake pan.
  • Place the eggs and sugar in a large mixing bowl set over a pan of gently simmering water and whisk till very thick.
  • Remove from heat and sieve the flour and cocoa powder into the bowl and carefully fold in.
  • Fold in the walnuts and carrots and oil till all combined.
  • Pour in the cake pan and bake for 45 minutes till springy to the touch.Cool completely.
  • Filling:
  • Beat together the cheese and the sugar till combined.
  • Beat in the melted chocolate.Split the cake in half,spread half of the filling on it,top with the other cake half and cover with the remainder of the filling swirling with a knife or a teaspoon to make a decorative look.Chill
