How to make it

  • In large saucepan, cook bacon over medium heat until fat is rendered.
  • Add onion and saute until onion is softened.
  • Add garlic and saute 1 minute.
  • Add pumpkin puree, broth, salt and pepper. Simmer 5 minutes.
  • Stir in heavy cream and heat through.
  • Remove from heat. Stir in cheese and parsley until smooth.
  • Ladle into bowls.
  • Top with a sprinkle of freshly ground nutmeg if desired.
