Pumpkin Bisque with Smoked Gouda

- 4 slices bacon, diced shopping list
- 1/2 cup sweet onion, diced shopping list
- 1 teaspoon garlic, minced shopping list
- 1 (15 ounce) can pumpkin puree (unspiced) shopping list
- 4 cups chicken broth shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon ground black pepper shopping list
- 1 cup heavy cream shopping list
- 1/2 cup (2 ounces) smoked gouda cheese, shredded shopping list
- 1 tablespoon flat-leaf parsley, minced shopping list
How to make it
- In large saucepan, cook bacon over medium heat until fat is rendered.
- Add onion and saute until onion is softened.
- Add garlic and saute 1 minute.
- Add pumpkin puree, broth, salt and pepper. Simmer 5 minutes.
- Stir in heavy cream and heat through.
- Remove from heat. Stir in cheese and parsley until smooth.
- Ladle into bowls.
- Top with a sprinkle of freshly ground nutmeg if desired.
