Ingredients

How to make it

  • Pierce beets with fork tines then arrange beets and 3 cups water in a microwave safe dish.
  • Seal airtight with double layer of plastic wrap then microwave on high for 10 minutes.
  • Drain beets and let cool to the touch.
  • Peel off and discard skins.
  • Cut beets into quarters and crosswise slices then place in large bowl.
  • Heat oven to 425 then coat a large nonstick baking pan with cooking spray.
  • In small bowl combine honey, vinegar, butter, water, orange rind, thyme, salt and black pepper then pour over beets and toss.
  • Transfer beets to a baking pan and roast in oven turning occasionally for 20 minutes.
  • To serve transfer beets to a bowl and serve warm.

    Could you use red wine vinegar in place of sherry vinegar? Could you use the oven instead of the microwave instead, if so what would the heat and cooking time be?

    Being a lover of all things tasty delicate scrumptious sweet I had to bring this to Tryst. Yes, I'm tempermental and passionate, and prone to pangs of sadness, and currently in the throes of melancholic depression, and I have the flu, but, my fever and delerium finally broke this morning. I think I will make this in the evening. If I ever have my choice for a last meal, I think this is it, honey beets leeks and turnips, and a big chocolate milk shake for dessert, with strawberries.
