Ingredients

How to make it

  • cut the brinjals into 4 pieces each lengthwise
  • cut the onions and tomatoes into strips - not too fine
  • cut the green chillies lengthwise
  • peel and mash the garlic
  • combine all the ingredients in a bowl with olive oil, salt and pepper
  • add whatever dry herbs you like
  • lay out the contents of the bowl on a tray and pop it in the oven [ pre heated to about 150] its better to put everything in foil first.
  • once its cooked, sprinkle some fresh corriander leaves over it and serve
  • goes great with garlic bread, indian breads like roti
  • please forgive my proportions, i just cook by instinct and am never sure how much of what goes into anything i make...

    This sounds fabulous!! Thanks for this. I found little aubergines in the local Indian Bazaar. also okra and long squash. would cinnamon be good with these veggies? 55555 trish

    jennifer - 2 and a half pounds make a kilo - so i guess half a kilo would be 1 and a quarter pounds or about maybe 12 small aubergines! hope that helps
