How to make it

  • Get out your favorite big bowl. Peel the bananas and mash them with a whisk until they are quite mushy almost liquid. Cream in the brown sugar. Add the yogurt or buttermilk, melted margarine or butter, egg and vanilla. Beat until it is smooth and satiny. You may use electric beaters if you prefer, but a whisk works really well. Add the salt, baking powder and flour. Mix again until all is lump free and sort of fluffy. Turn the mixture into a well oiled 9 by 13-inch rectangular pan. Bake at 350° for about 40 minutes. The cake is done when it is golden brown, the edges have pulled away from the sides of the pan, and the top springs back when pressed lightly in the center. Cool thoroughly and frost with chocolate or vanilla frosting.

    This one is tender, moist and flavorful. Outstanding recipe!

    (My changes, necessary out here in the wilderness so far from town: white flour instead of whole wheat, sour cream instead of buttermilk or yogurt, butter instead of margarine. Baked it in the solar cooker for about 90 minutes at a temperature that I guess probably averaged 275 F.) Mmm, mmm. I don't think it needs any frosting.

    What do you think about using all or 1/2 vanilla flavored yogurt? Would it be too much?
