This my version of Shephard's Pie, it's simple yet filling. Good with fresh baked bread and churned butter. You can actually prep this the night before and then throw it in the oven when you're ready.

Ingredients
  • 1 lb. Ground Beef, cooked
  • 3 cups Mashed Potatoes, to your taste
  • 2 tablespoons Margarine
  • 1 Carrot, thin sliced (a little less than an 1/8-inch)
  • 1 stalk Celery, thin sliced
  • 1/2 medium Onion, diced
  • 1/2 can Corn Kernals
  • 1/2 can Greenbeans
  • Salt and Pepper, to taste
  • Paprika

Directions
  1. Preheat oven to 400 degrees.
  2. Cook ground beef with salt and pepper, to taste.
  3. Make 3 cups of mashed potatoes of your choice.
  4. I use red new potatoes, milk, butter and about 1/2 cup of grated sharp cheddar.
  5. Saute carrots, celery and onion in margarine over medium heat (mirepoix)
  6. Cook mirepoix slowly so not to brown and everything cooks evenly.
  7. When mirepoix is done add corn and greenbeans, mix the vegetables up.
  8. Spray a casserole dish with cooking spray and begin to layer everything: meat, then veggies, then mashed potatoes.
  9. Sprinkle with a little paprika and bake for 35 minutes at 400.
  10. NOTE: You can double the batch and freeze the second batch for up to a month. When ready to eat, don't defrost! Place in a preheated oven at 350 degrees and bake for about an hour, or until heated through.
