Ingredients

How to make it

  • Preheat oven to 400 degrees.
  • Cook ground beef with salt and pepper, to taste.
  • Make 3 cups of mashed potatoes of your choice.
  • I use red new potatoes, milk, butter and about 1/2 cup of grated sharp cheddar.
  • Saute carrots, celery and onion in margarine over medium heat (mirepoix)
  • Cook mirepoix slowly so not to brown and everything cooks evenly.
  • When mirepoix is done add corn and greenbeans, mix the vegetables up.
  • Spray a casserole dish with cooking spray and begin to layer everything: meat, then veggies, then mashed potatoes.
  • Sprinkle with a little paprika and bake for 35 minutes at 400.
  • NOTE: You can double the batch and freeze the second batch for up to a month. When ready to eat, don't defrost! Place in a preheated oven at 350 degrees and bake for about an hour, or until heated through.

    I cooked the hamburger, onion, carrot and celery all at the same time. I used a full can of corn and greenbeans, used 6 cups of mashed potatoes and added 1 can of cream of mushroom soup, 1 small can of mushroom pieces and 1 can of milk. It came out ok. Next time I will add some thyme and rosemary to spice it up a little. Thanks for sharing.
