Simple Shephards Pie

- 1 lb. ground beef, cooked shopping list
- 3 cups mashed potatoes, to your taste shopping list
- 2 tablespoons margarine shopping list
- 1 carrot, thin sliced (a little less than an 1/8-inch) shopping list
- 1 stalk celery, thin sliced shopping list
- 1/2 medium onion, diced shopping list
- 1/2 can corn Kernals shopping list
- 1/2 can Greenbeans shopping list
- salt and pepper, to taste shopping list
- paprika shopping list
How to make it
- Preheat oven to 400 degrees.
- Cook ground beef with salt and pepper, to taste.
- Make 3 cups of mashed potatoes of your choice.
- I use red new potatoes, milk, butter and about 1/2 cup of grated sharp cheddar.
- Saute carrots, celery and onion in margarine over medium heat (mirepoix)
- Cook mirepoix slowly so not to brown and everything cooks evenly.
- When mirepoix is done add corn and greenbeans, mix the vegetables up.
- Spray a casserole dish with cooking spray and begin to layer everything: meat, then veggies, then mashed potatoes.
- Sprinkle with a little paprika and bake for 35 minutes at 400.
- NOTE: You can double the batch and freeze the second batch for up to a month. When ready to eat, don't defrost! Place in a preheated oven at 350 degrees and bake for about an hour, or until heated through.
