Pumpkin Scones

- A single egg shopping list
- 1 Tbsp / (15 g) of butter shopping list
- 1/2 cup / (100 g) of sugar shopping list
- 1 cup or 250 ml of cold cooked mashed pumpkin or canned works well shopping list
- 2 cups of self raising flour (200 g) shopping list
- 1/8 tsp (0.5 ml) table salt shopping list
- 1/4 tsp cinnamon shopping list
- dash of nutmeg shopping list
How to make it
- First grease a baking tray and then mix together the sugar and butter until the mixture is light and fluffy.
- Slowly add in your egg and beat it in well.
- Add the flour, the mashed pumpkin, cinnamon, nutmeg and the salt and fold in by hand.
- For personal preference I would taste test to see if it has the right amount of cinnamon or nutmeg for you
- Knead the mixture and then cut into small rounds.
- Bake for about 15 minutes at 425 degrees f (220c) until well risen and golden on top.
- Serve hot with butter (this is my idea), orange honey, powdered sugar whatever floats your boat..

I made this over the weekend. They were so good! They were so moist! Oddly enough, I served them with sliced sharp cheddar cheese and it really brought out the pumpkin flavor. One question: are they supposed to be really moist (almost like cupcake...more
