How to make it

  • First grease a baking tray and then mix together the sugar and butter until the mixture is light and fluffy.
  • Slowly add in your egg and beat it in well.
  • Add the flour, the mashed pumpkin, cinnamon, nutmeg and the salt and fold in by hand.
  • For personal preference I would taste test to see if it has the right amount of cinnamon or nutmeg for you
  • Knead the mixture and then cut into small rounds.
  • Bake for about 15 minutes at 425 degrees f (220c) until well risen and golden on top.
  • Serve hot with butter (this is my idea), orange honey, powdered sugar whatever floats your boat..

    I made this over the weekend. They were so good! They were so moist! Oddly enough, I served them with sliced sharp cheddar cheese and it really brought out the pumpkin flavor. One question: are they supposed to be really moist (almost like cupcakes)?
