Amish Oatmeal Pancakes Recipe

Ingredients

4 cups rolled oats ( can not use quick cooking oats )

1 cup flour

1/4 cup sugar

2 teaspoons baking powder

pinch of salt

1 quart buttermilk

4 eggs beaten

1/2 cup butter melted

2 teaspoons vanilla

Directions

In a large bowl combine all the dry ingredients

In a medium bowl combine all the wet ingredients

add liquid to dry all at once

stir with a fork just until well blended

Do not over blend

Let stand for 30 minutes batter will thicken

If batter becomes to thick add milk one tablespoon at a time until batter thins to your likeness

cook on a prepared hot griddle

This makes about 24 large pancakes they freeze very well and reheat nicely in the microwave the recipe halves very well also.
