Latin Mushrooms in Vinaigrette Dressing

- 1-1/2 pounds wild mushrooms sliced shopping list
- 1 teaspoon lemon zest finely grated shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 2 teaspoons parsley finely chopped shopping list
- 2 teaspoons mint shopping list
- 2 tablespoons red wine vinegar shopping list
- 1/4 cup extra virgin olive oil shopping list
- 1-1/2 teaspoons granulated sugar shopping list
- 1 teaspoon salt shopping list
How to make it
- Place mushrooms in small saucepan and cover tightly.
- Cook over low heat shaking pan frequently about 4 minutes until softened.
- Remove to ceramic bowl.
- Make a dressing out of the remaining ingredients and pour over mushrooms.
- Marinate at least 2 hours before serving.
