Crustless Leek And Gruyere Quiche Recipe
An easy quiche to make when leeks are in season. Skipping the crust save a few calories and lots of time. Add a carrot potage and a green salad on the side for a complete meal.

Ingredients
  • 2 large leeks, cleaned and sliced (white and pale green parts)
  • 1 onion, sliced finely
  • 2 tablespoons olive oil
  • 4 eggs
  • 1/2 cup coffee cream (5%)
  • 1 cup light Gruyère (15%), grated
  • 1/8 teaspoon ground nutmeg
  • 1 pinch smoky paprika (pimenton de la vera)
  • 1 tablespoon Dijon mustard
  • Big pinch dry thyme
  • Salt and pepper to taste
  • 2 tablespoons flour

Directions
  1. Grease a 9" pie pan (and find a larger pan to serve as water bath).
  2. Sauté leeks and onion with oil in a non-stick pan until tender. Add salt and pepper.
  3. Meanwhile, beat together eggs, cream, gruyere, flour, herbs and seasonings until well mixed.
  4. Pour into pie pan.
  5. Add sautéed vegetables.
  6. Sprinkle some extra grated cheese on top.
  7. Place in larger pan and slide into oven.
  8. Pour boiling water into the larger pan so the quiche sits halfway up in the water.
  9. Bake in the oven at 375 degrees F for 35 to 40 minutes, or until the top is light brown.
  10. Remove from oven, lift out of water pan, and let cool on a rack.
  11. Serve warm or cool.
