How to make it

  • Lay four sheets of heavy duty foil , about 18 inches long, out on your counter, with a crease along the center of the width to use as a guide.
  • Place a chicken cutlet on one side, above the "line"., on each sheet of foil. Divide the vegetables among these four servings. Sprinkle on the seasonings. Place about 1 Tbsp. of butter on each pile and then pour on a bit of white wine.
  • Fold each sheet in half along the pre-folded line. Roll along the sides, do a double roll to really seal these packets tightly.
  • When the grill is very hot place each packet on the grate and cook for 18 minutes.
  • When you are ready to serve place some cooked rice on each dish. Slip a knife to cut an X in the top of each packet to let steam out. Then use a large slotted spatula to remove the solid ingredients from the packet to the plate, over the rice. Pour on some of the cooking liquid.
  • ** You can also prepare these in a 450 degree oven, packets on a jelly roll pan, for 18 minutes
