How to make it

  • Heat olive oil in a frying pan, add the chopped onions and fry until golden yellow in color
  • Add chopped green chilli and fry for one minute and then add the chopped tomatoes, salt and pepper. Fry for 5 minutes.
  • Add the sliced green olives and fry for one minute.
  • Mix well the eggs in a plate and add to the frying pan. Cover for one minutes and mix slightly.
  • Fry for one more minute covered and then mix again.
  • Remove from the pan and put in a plate.
  • Sprinkle with shredded mint leaves.
  • Enjoy with pita bread and a cup of mint tea.

    I just tried this recipe, but I use sun dried tomatoes cause after thypoon I can't get good fresh tomatoes, it tastes fantastic. thanks
