Tomato Omelet

- 6 Medium size eggs shopping list
- 1 large onion chopped shopping list
- 3 medium size tomatoes chopped shopping list
- 1 large green hot chilli chopped shopping list
- 1/2 tea spoon salt shopping list
- 1/2 tea spoon black pepper shopping list
- 4 table spoons sliced green olives shopping list
- 4 table spoons extra virgin olive oil shopping list
- 1 table spoon shredded green mint leaves shopping list
How to make it
- Heat olive oil in a frying pan, add the chopped onions and fry until golden yellow in color
- Add chopped green chilli and fry for one minute and then add the chopped tomatoes, salt and pepper. Fry for 5 minutes.
- Add the sliced green olives and fry for one minute.
- Mix well the eggs in a plate and add to the frying pan. Cover for one minutes and mix slightly.
- Fry for one more minute covered and then mix again.
- Remove from the pan and put in a plate.
- Sprinkle with shredded mint leaves.
- Enjoy with pita bread and a cup of mint tea.
