Tomato Omelet Recipe
A tasty Omelet without the traditional omelet taste. Very filling and satisfying.

Ingredients
  • 6 Medium size eggs
  • 1 large onion chopped
  • 3 medium size tomatoes chopped
  • 1 large green hot chilli chopped
  • 1/2 tea spoon salt
  • 1/2 tea spoon black pepper
  • 4 table spoons sliced green olives
  • 4 table spoons extra virgin olive oil
  • 1 table spoon shredded green mint leaves

Directions
  1. Heat olive oil in a frying pan, add the chopped onions and fry until golden yellow in color
  2. Add chopped green chilli and fry for one minute and then add the chopped tomatoes, salt and pepper. Fry for 5 minutes.
  3. Add the sliced green olives and fry for one minute.
  4. Mix well the eggs in a plate and add to the frying pan. Cover for one minutes and mix slightly.
  5. Fry for one more minute covered and then mix again.
  6. Remove from the pan and put in a plate.
  7. Sprinkle with shredded mint leaves.
  8. Enjoy with pita bread and a cup of mint tea.

I just tried this recipe, but I use sun dried tomatoes cause after thypoon I can't get good fresh tomatoes, it tastes fantastic. thanks
