Baa Mee Phad Phak Thai Vegetable Noodles Recipe
This is a recipe I obtained from a friend who is an absolute fantastic cook. She had a Thai dinner party a few years back and this was one of the many magnificent dishes she served. Enjoy

Ingredients
  • 4 cups boiled and cooled Thai egg noodles
  • 2 cups sliced and blanched mixed vegetables (carrots, beans, cauliflower, baby corn)
  • 1 tablespoon bamboo shoots sliced and blanched
  • 2 tablespoons mushrooms sliced
  • 2 teaspoons chopped garlic
  • 2 teaspoons chopped ginger
  • 2 teaspoons soy sauce
  • 2 teaspoons oyster sauce
  • 4 tablespoons oil
  • 2 spring onions chopped
  • 1/2 teaspoon salt
  • 1 teaspoon white pepper

Directions
  1. Toss boiled noodles with some oil so that they do not become sticky.
  2. Heat oil in a wok and briefly sauté chopped ginger and garlic.
  3. Mix in the noodles and vegetables and toss well then mix in sauces, salt and pepper.
  4. Toss noodles on high heat for 3 minutes then serve hot garnished with spring onions.
