How to make it

  • Bring 6 quarts of salted water to a boil.
  • Heat oil in skillet. Add bacon. Cook til browned but still soft in center, about 6 minutes.
  • Remove bacon from skillet, leaving about 4 Tablespoons of fat in pan.Add onions and cook til wilted but still crunchy, about 4-5 minutes. Add broth, bring to boil, then adjust to lively simmer. Cook til liquid is reduced by half.
  • Stirlinguine into boiling salted water and cook until done, about 9 minutes.
  • Ladle off about a cup of pasta cooking water and set aside.
  • Drain pasta.
  • In large pot combine drained pasta and reduced sauce. Bring to a boil, stirring to coat pasta.
  • If neccessary, add reserved cooking liquid or more chicken broth to make sure the pasta is coated generously.
  • Remove from heat and add egg yolks one at a time, tossing well after each.
  • Add grated cheese, then black pepper, tossing well, and serve immediately.
