Linguine with Bacon and Onions

- 6 oz bacon, sliced into pieces shopping list
- 2 Tablespoons extra virgin olive oil shopping list
- 2 Large yellow onions sliced 1/2 inch thick shopping list
- 1 and 1/2 cups hot chicken broth shopping list
- 1 pound linguine shopping list
- 3 egg yolks shopping list
- 1 cup freshly grated parmigiano-Reggiano ( we use more ) shopping list
- Coarsely ground black pepper shopping list
How to make it
- Bring 6 quarts of salted water to a boil.
- Heat oil in skillet. Add bacon. Cook til browned but still soft in center, about 6 minutes.
- Remove bacon from skillet, leaving about 4 Tablespoons of fat in pan.Add onions and cook til wilted but still crunchy, about 4-5 minutes. Add broth, bring to boil, then adjust to lively simmer. Cook til liquid is reduced by half.
- Stirlinguine into boiling salted water and cook until done, about 9 minutes.
- Ladle off about a cup of pasta cooking water and set aside.
- Drain pasta.
- In large pot combine drained pasta and reduced sauce. Bring to a boil, stirring to coat pasta.
- If neccessary, add reserved cooking liquid or more chicken broth to make sure the pasta is coated generously.
- Remove from heat and add egg yolks one at a time, tossing well after each.
- Add grated cheese, then black pepper, tossing well, and serve immediately.
