Broiled Salmon

- 1/2 cup hot tomato salsa shopping list
- 1/4 cup fresh lime juice shopping list
- 1 teaspoon Dijon mustard shopping list
- 1 garlic clove minced shopping list
- 4 salmon steaks shopping list
- 1/4 cup butter softened shopping list
- 3/4 teaspoon lime zest grated shopping list
- 1/4 teaspoon cumin ground shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1 tablespoon vegetable oil shopping list
- lime wedges shopping list
How to make it
- Set aside two tablespoons of salsa.
- In medium bowl combine remaining salsa, lime juice, mustard and garlic.
- Coat salmon steaks in marinade then cover and refrigerate for at least 1/2 hour.
- In medium bowl combine butter with lime zest, cumin and reserved salsa.
- Mix well and set aside.
- Preheat broiler on high.
- Remove salmon steaks from marinade and discard marinade.
- Season with salt and pepper then arrange side by side in oiled oven proof dish.
- Place salmon under broiler 4" from heat source.
- Broil 3 minutes per side then bone and skin salmon steaks.
- Arrange salmon steaks on warm plates.
- Spoon a teaspoon of salsa butter on top of each steak.
- Garnish plates with lime wedges then serve hot.
