Broiled Salmon Recipe
Very easy, but very impressive and very tasty salmon dish. Enjoy.

Ingredients
  • 1/2 cup hot tomato salsa
  • 1/4 cup fresh lime juice
  • 1 teaspoon Dijon Mustard
  • 1 garlic clove minced
  • 4 salmon steaks
  • 1/4 cup butter softened
  • 3/4 teaspoon lime zest grated
  • 1/4 teaspoon cumin ground
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon vegetable oil
  • Lime wedges

Directions
  1. Set aside two tablespoons of salsa.
  2. In medium bowl combine remaining salsa, lime juice, mustard and garlic.
  3. Coat salmon steaks in marinade then cover and refrigerate for at least 1/2 hour.
  4. In medium bowl combine butter with lime zest, cumin and reserved salsa.
  5. Mix well and set aside.
  6. Preheat broiler on high.
  7. Remove salmon steaks from marinade and discard marinade.
  8. Season with salt and pepper then arrange side by side in oiled oven proof dish.
  9. Place salmon under broiler 4" from heat source.
  10. Broil 3 minutes per side then bone and skin salmon steaks.
  11. Arrange salmon steaks on warm plates.
  12. Spoon a teaspoon of salsa butter on top of each steak.
  13. Garnish plates with lime wedges then serve hot.

Just what I was looking for, a salmon recipe with a tex-mex flair....I'll let you know how it comes out when I get around to fixing it!
