Stuffed Texas Sweet Onion Shells Recipe
I was skeptical about this until I tried it. Now when Vidalia (1015) onions are in season I make them several times and everybody loves them. We can't get enough of them. Yummy.

  • 4 large Texas Sweet 1015 Onions
  • 1/2 pound lean ground beef
  • 1 tablespoon olive oil
  • 4 ounce package seasoned black bean and rice mix
  • 1 cup fresh thawed frozen or canned corn kernels
  • 1/2 cup chopped tomato

Directions
  1. To prepare each onion for stuffing cut a minimal slice from root end then slice off about 3/4” from stem end, peel and discard skin.
  2. With small knife or apple corer scoop out and reserve onion using spoon as needed to make a 1/4” thick shell.
  3. Do not cut through bottom of shell.
  4. Chop enough scooped onion to make 1 cup and sauté with beef in oil in skillet until beef is browned.
  5. Add rice mix, seasoning packet and water called for on package.
  6. Cover then bring to a boil and simmer 25 minutes.
  7. Add corn and tomato.
  8. Place onions in baking dish and spoon filling into shells mound up.
  9. Add 1/2 cup water to dish.
  10. Cover and bake at 425 for 35 minutes.
