Lamb Curry

- 3 hot dried chilies shopping list
- 1" piece of fresh ginger, peeled shopping list
- 2" cinnamon stick shopping list
- 1/4 tsp cardamom seeds shopping list
- 3 whole cloves shopping list
- 2 cloves garlic shopping list
- 2 tbsp white poppy seeds shopping list
- 1 tsp cumin seeds shopping list
- 1 tbsp coriander seeds shopping list
- 1/2 cup water shopping list
- 1/2 cup beef broth shopping list
- 1 medium white onion, chopped shopping list
- 1/3 cup olive oil or clarified butter (ghee) shopping list
- 2 pounds lean boneless lamb, cut into 1" (2.5 cm) chunks shopping list
- 1/2 cup plain yogurt shopping list
- 1/2 tsp saffron threads shopping list
- 1 tbsp lemon juice shopping list
- 1/4 cup (65gm) raw cashews shopping list
- 2 tbsp (30ml) chopped fresh coriander leaves shopping list
How to make it
- Grind spices together in the blender with the water, add the beef stock.
- Soak saffron threads in a little boiling water and set aside.
- Sauté onions in oil until golden brown.
- Add saffron and its liquid, spice mixture and yogurt and then add the lamb chunks.
- Simmer covered for one hour until lamb is cooked to taste.
- Add lemon juice, and garnish the Lamb Korma with coriander leaves and cashews before serving.
- I like to servr right in the saucier pan.
