Pot Roast Pasta Bake

- 1/2 pound uncooked pasta (macaroni and penne work well) shopping list
- 2 cups chopped leftover pot roast shopping list
- 1 cup leftover gravy shopping list
- 1-2 cups cooked vegetables (I used a mix of spinach, broccoli and edamame, but anything you like would be fine) shopping list
- 4 Tablespoons butter shopping list
- 1/4 cup flour shopping list
- 3 cups milk shopping list
- salt and pepper to taste shopping list
- 1 cup grated parmesan cheese (any cheese you like would be fine) shopping list
How to make it
- Preheat oven to 375 degrees F.
- Boil water for pasta.
- Butter baking dish.
- Melt butter in saucepan.
- Add flour and whisk until combined.
- Warm milk in microwave.
- Add milk to roux in pan, whisking so no lumps form.
- Season sauce with salt and pepper.
- Cook pasta to al dente - do not overcook because it will cook more in the oven.
- Combine pot roast and gravy in small bowl.
- Put half of cooked pasta in baking dish.
- Cover with about a cup of white sauce.
- Sprinkle some cheese on.
- Spread meat and gravy mixture over the pasta.
- Spread vegetables over meat.
- Top with remaining pasta.
- Pour remaining white sauce over whole dish.
- Sprinkle with half of remaining cheese.
- Bake for 30 minutes.
- Add rest of cheese and bake 20 minutes more until bubbly and cheese starts to brown a little.
