Chicken Tenders with Gravy

- 7 chicken tenders (I get HUGE chicken breasts from my Argentine Market and cut my own tenders) shopping list
- 2 eggs (1 large egg would do but mine are all different sizes as are free roaming from someone hubby works with) shopping list
- All purpose flour shopping list
- kosher salt, fresh cracked pepper, garlic powder shopping list
- Enough canola oil (I prefer) for frying shopping list
How to make it
- Whisk eggs with a bit of salt, pepper and garlic power in container large enough to hold tenders.
- Put enough oil in skillet for frying and turn on low.
- When oil is hot enough, dredge tenders in flour seasoned with salt, pepper and garlic powder.
- Fry a few at a time, place on baking rack that is in baking pan when done.
- Continue to fry all the tenders until a nice light golden brown. Doesn't take long.
- Place rack in oven on 200 degrees to drain and keep warm.
- Drain off oil keeping enough to make a roux, keeping all the little crispies.
- On low add enough flour to make a roux seasoned with salt and pepper until a nice peanut butter color. Add milk to make the gravy to the right consistency.
- Serve with rice, mashed taters or egg noodles.
