Seared Halibut With Roasted Parmigiana Asparagus Recipe
This is a great recipe to entertain with because it is VERY easy and VERY delicious. People will think that it took a lot longer than it really did. Although Halibut can be kinda pricey, it's worth the splurge to get a good cut.

Ingredients
  • 1/2 cup EVOO
  • 2 tbsps butter
  • 4 Halibut Steaks (about 6 oz a piece)
  • Sea salt
  • white pepper
  • 1/2 all purpose flour
  • 2-3 bundles of aspargus
  • 2 small shallots
  • 3 garlic cloves, minced
  • 3 tbsps EVOO
  • 3/4 cup fresh grated, good quality parmesan

Directions
  1. For the Halibut: Preheat a Large saute pan over medium-high heat.
  2. Add EVOO and butter to pan.
  3. Season Halibut liberally with salt and pepper and dust with flour, shaking off the excess.
  4. When the butter starts to brown, gently lay each steak into the pan.
  5. Allow to cook until golden brown and slightly crusty on each side and cook thoroughly about 3-5 minutes per side
  6. For Aspargus: Preheat the oven the 350.
  7. Trim and clean the asparagus.
  8. In a large bowl add the minced shallots, garlic and EVOO and salt and pepper and asparagus and toss, coating each piece with your fingers.
  9. Lay the asparagus onto a baking hseet and roast until firm but tender about 10 minutes.
  10. Right before the asparagus is done, sprinkle the parmesan over it and put back into the oven for just a minute to melt the cheese.
  11. To serve: Place 4-6 pieces of asparagus on the plate and lay the Halibut steak on top and drizzle with EVOO and garnish with chives.
