How to make it

  • For the Halibut: Preheat a Large saute pan over medium-high heat.
  • Add EVOO and butter to pan.
  • Season Halibut liberally with salt and pepper and dust with flour, shaking off the excess.
  • When the butter starts to brown, gently lay each steak into the pan.
  • Allow to cook until golden brown and slightly crusty on each side and cook thoroughly about 3-5 minutes per side
  • For Aspargus: Preheat the oven the 350.
  • Trim and clean the asparagus.
  • In a large bowl add the minced shallots, garlic and EVOO and salt and pepper and asparagus and toss, coating each piece with your fingers.
  • Lay the asparagus onto a baking hseet and roast until firm but tender about 10 minutes.
  • Right before the asparagus is done, sprinkle the parmesan over it and put back into the oven for just a minute to melt the cheese.
  • To serve: Place 4-6 pieces of asparagus on the plate and lay the Halibut steak on top and drizzle with EVOO and garnish with chives.
