Seared Halibut with Roasted Parmigiana Asparagus

- 1/2 cup EVOO shopping list
- 2 tbsps butter shopping list
- 4 halibut steaks (about 6 oz a piece) shopping list
- sea salt shopping list
- white pepper shopping list
- 1/2 all purpose flour shopping list
- 2-3 bundles of aspargus shopping list
- 2 small shallots shopping list
- 3 garlic cloves, minced shopping list
- 3 tbsps EVOO shopping list
- 3/4 cup fresh grated, good quality parmesan shopping list
How to make it
- For the Halibut: Preheat a Large saute pan over medium-high heat.
- Add EVOO and butter to pan.
- Season Halibut liberally with salt and pepper and dust with flour, shaking off the excess.
- When the butter starts to brown, gently lay each steak into the pan.
- Allow to cook until golden brown and slightly crusty on each side and cook thoroughly about 3-5 minutes per side
- For Aspargus: Preheat the oven the 350.
- Trim and clean the asparagus.
- In a large bowl add the minced shallots, garlic and EVOO and salt and pepper and asparagus and toss, coating each piece with your fingers.
- Lay the asparagus onto a baking hseet and roast until firm but tender about 10 minutes.
- Right before the asparagus is done, sprinkle the parmesan over it and put back into the oven for just a minute to melt the cheese.
- To serve: Place 4-6 pieces of asparagus on the plate and lay the Halibut steak on top and drizzle with EVOO and garnish with chives.
