Chicken Tikka Masala Recipe
This is the yummiest dish ever this dish was developed in England for the English pallet and not usually hot but I prefer it a little spicy.....

Ingredients
  • MARINADE
  • • 2 large boneless skinless chicken breasts, cut into bite size pieces
  • • 6 tbsp natural yogurt
  • • 2 tsp of lemon/lime juice
  • • 1 tsp turmeric
  • • 2 tsp chilli powder
  • • 2 tsp coriander and cumin powder
  • • 2 tsp of ginger and garlic crushed (almost pureed)
  • • Salt to taste
  • TIKKA MASALA PASTE
  • • 1large onion chopped
  • • 2.5 cm/1 inch fresh ginger, crushed
  • • 2 cloves Garlic, crushed
  • • 1-2 tbsp olive oil
  • • 2 tsp chilli powder (or non if you like)
  • • 1 tsp coriander powder
  • • 1 tsp cumin powder
  • • 8 tbsp tomato puree
  • • 1 tsp salt
  • • 6 tbsp double cream
  • • Sprig of fresh coriander leaves

Directions
  1. METHOD
  2. 1. Mix together the marinade ingredients,
  3. coat the chicken pieces and leave overnight.
  4. In a large wide pan, heat the oil and fry the onion over a medium heat until brown.
  5. Add the ginger and garlic to the onion pan and sauté then add the spices and cook for 30 seconds.
  6. Stir in the tomato puree and simmer for 1-2 minutes.
  7. Add the marinated chicken, stir in and cook for 10 – 15 minutes at medium heat with lid on.
  8. Add the cream and gently stir the chicken for 3-5 minutes
