  • * 100 g (3 1/2 oz.) thick yogurt
  • * 2 eggs
  • * 700 g (1 1/2 lb.) flour
  • * A pinch of baking soda
  • * Olive oil for frying
  • For the syrup
  • * 200 g (1 cup) sugar
  • * 200 ml (3/4 cup) water
  • * 1 tsp. lemon juice

Directions
  1. 1. Make the syrup by combining the sugar, water and lemon juice. Boil for 2 minutes and remove from the heat.
  2. 2. Beat the eggs with the yogurt and, with a wooden spoon, mix in the baking soda and as much flour as needed to make a soft dough.
  3. 3. Heat the oil, and in another container have some oil at room temperature.
  4. 4. First dip a spoon into the cold oil, then take a spoonful of dough and drop it into the hot oil to cook for 2 or 3 minutes. Use your finger to push the batter off the spoon if necessary,
  5. 5. Drain the doughnuts on paper towels then immerse in the syrup for 3-4 minutes.
  6. 6. Place on a platter. Drizzle with the remaining syrup and serve.
