Ingredients
  • 4 bacon rashers, chopped
  • 15g butter
  • 3 leeks, finely sliced
  • 6 zucchini, sliced
  • 2 tablespoons oil
  • 16 chicken thigh fillets, chopped
  • 1kg potatoes, sliced
  • 15g butter, extra
  • ½ cup grated tasty cheese
  • Cheese sauce
  • 45g butter
  • 1 clove garlic, crushed
  • 1 chicken stock cube, crumbled
  • ¼ cup plain flour
  • 2 cups milk
  • 1 cup grated tasty cheese
  • ¼ cup grated parmesan cheese

Directions
  1. Cook bacon in frying pan until crisp. Add butter, leeks and zucchini, cook 5 minutes or until leeks are tender. Remove from pan.
  2. Heat oil in the pan, add chicken gradually, cook over high heat until lightly browned all over, all to bacon mixture with cheese sauce, mix well. Place in shallow ovenproof dish, top with potatoes. Brush with extra melted butter, sprinkle with cheese, bake at 190°C for 60 minutes or until golden brown.
  3. Cheese sauce: Melt butter in saucepan, add garlic, stock cube and flour, cook 1 minute, stirring. Gradually stir in milk, stir until sauce boils and thickens, add cheeses, stir until melted.
