  • 3/4 cup sugar
  • 1/4 cup butter
  • 1 egg
  • 1 cup milk, water, or sour cream
  • 1 and 1/4 cup sifted all purpose flour, add a 1/4 cup more if needed
  • 1 tsp vanilla extract
  • 1/4 tsp salt, add 1/4 more if you want, but ONLY a 1/4 more
  • 1 3/4 tsp of Baking Powder. If you want 2 tsp, go right ahead, any of these combinations work, but it will end up with a slightly different flavor each time, but only slightly.
  • Topping
  • 1/2 cup of Brown Sugar
  • 2 tbsp all purpose flour
  • 1 tbsp of butter, or two, two will be more mixed and 1 more crumbled when mixed with the other ingredients
  • 2 tsp cinnamon
  • Add a 1/4 cup of anything you want in the topping, and you can mix a few things in the 1/4 cup like chocolate chips and raisins, etc.

Directions
  1. Preheat oven to 375 degrees Fahrenheit
  2. Spray a 9" sqaure pan with cooking oil.
  3. Measure all the dry ingredients in first, so as to get that out of the way.
  4. Then add the egg, milk with vanilla extract mixed in, and butter.
  5. Mix with a whisk until no more clumps of dry ingredients can be seen.
  6. Use a rubber scraper, or, as I call it, a plastic spatula to spread batter inside of the 9" pan.
  7. Topping
  8. Mix all ingredients in a cereal bowl with a fork until clumpy (1 tbsp of butter) or more mixed (2 tbsp of butter)
  9. Use the fork to spread out the topping over the cake batter.
  10. Put in the oven for 25 minutes to start and then stick a knife in the center and pull it out. If it comes out without anything but grease visible, then congrats your custom coffee cake is finished! If not, add an additional five minutes and check with the knife again. Repeat until finished.

Hello! I like this recipe but don't understand why you would add " 1/4 cup flour,if needed part". Is the mixture too soupy or something? Please clarify. Thanks!


If the dish turns out to be a little soupy, add a 1/4 cup more is what it means


That sounds completely easy. I think I'm gonna try that sometime this week for breakfast =)
