Good And Easy Meat Loaf Recipe

Ingredients

1 cup quick cooking oatmeal

2 eggs slightly beaten

1/3 cup ketchup

1 package beefy onion soup mix

2 tablespoons Worchstershire sauce

1/2 teaspoon ground pepper

1 cup shredded potatoes... You can use frozen

1 pounds ground chuck

TOPPING GLAZE

1/2 cup ketchup

1/4 cup brown sugar

2 tablespoons yellow mustard... I also like the ground mustard .

Directions

Mix the first 7 ingredents in a large bowl.

Add the ground beef

Gently mix

Add the potatoes

Gently mix again..

Form into a loaf or put in loaf pan..

Bake for 45 minutes at 350f

Mix glaze and add to top...

Bake for another 15 minutes

Let sit for at least 15 minutes before you slice...

I drain the drippings after the 45 minutes and make a gravy...

This is very close to my meatloaf except for your addition of potatoes. I made this recipe for dinner tonight and it is, indeed, very good. I am not sure I noticed a huge difference with the addition of the potatoes but it didn't hurt it. It was moist with a nice flavour. Thanks for sharing your recipe.
