Spice Island Shrimp And Rice

- 2 lbs of shrimp, peeled shopping list
- 1 lemon shopping list
- 2 1/2 cups of rice shopping list
- 6 cups of chicken broth or use vegetable broth shopping list
- 5 tablespoons oil shopping list
- 4 tablespoons tomato paste shopping list
- 1/4 cup chopped green peppers shopping list
- 1 pinch oregano shopping list
- 2 teaspoon mashed garlic (2 cloves) shopping list
- 1 pinch black pepper shopping list
- 1/8 cup chopped seedless olives shopping list
- 1/4 cup chopped celery shopping list
- 1 soup spoon finely chopped parsley shopping list
- 1 soup spoon finely chopped fresh coriander (cilantro) shopping list
- 1/2 teaspoon of thyme leaves shopping list
- couple pinches of salt (depends on how salty the olives and broth is already) use less if they are really salty already shopping list
How to make it
- In an iron pot heat the 3 spoons of oil.
- Add the quartered lemon, olives, celery,oregano, garlic, black pepper, tomato paste, green peppers, garlic and thyme.
- Add the shrimps and stir (be careful with hot oil splattering)
- Cover and wait two minutes, then stir again.
- Add two more spoons of oil, add rice stir to coat.
- Add broth and bring to a boil.
- Add cilantro and parsley leaves.
- Stir regularly to avoid excessive sticking. Let 3/4 of the broth evaporate, by then a grain of rice should be about 3 times its original size and tender to the tooth.
- Adjust salt to taste. Fish out the lemon quarters and discard.
- Serve while hot.
