How to make it

  • In an iron pot heat the 3 spoons of oil.
  • Add the quartered lemon, olives, celery,oregano, garlic, black pepper, tomato paste, green peppers, garlic and thyme.
  • Add the shrimps and stir (be careful with hot oil splattering)
  • Cover and wait two minutes, then stir again.
  • Add two more spoons of oil, add rice stir to coat.
  • Add broth and bring to a boil.
  • Add cilantro and parsley leaves.
  • Stir regularly to avoid excessive sticking. Let 3/4 of the broth evaporate, by then a grain of rice should be about 3 times its original size and tender to the tooth.
  • Adjust salt to taste. Fish out the lemon quarters and discard.
  • Serve while hot.
