Ingredients

2 lbs of shrimp, peeled

1 lemon

2 1/2 cups of rice

6 cups of chicken broth or use vegetable broth

5 tablespoons oil

4 tablespoons tomato paste

1/4 cup chopped green peppers

1 pinch oregano

2 teaspoon mashed garlic (2 cloves)

1 pinch black pepper

1/8 cup chopped seedless olives

1/4 cup chopped celery

1 soup spoon finely chopped parsley

1 soup spoon finely chopped fresh coriander (cilantro)

1/2 teaspoon of thyme leaves

couple pinches of salt (depends on how salty the olives and broth is already) use less if they are really salty already

Directions

In an iron pot heat the 3 spoons of oil.

Add the quartered lemon, olives, celery,oregano, garlic, black pepper, tomato paste, green peppers, garlic and thyme.

Add the shrimps and stir (be careful with hot oil splattering)

Cover and wait two minutes, then stir again.

Add two more spoons of oil, add rice stir to coat.

Add broth and bring to a boil.

Add cilantro and parsley leaves.

Stir regularly to avoid excessive sticking. Let 3/4 of the broth evaporate, by then a grain of rice should be about 3 times its original size and tender to the tooth.

Adjust salt to taste. Fish out the lemon quarters and discard.

Serve while hot.
