a great citrus butter, for sweet breads or light cakes

Ingredients
  • 1/2 c lemon juice
  • 75g butter
  • 1 1/4 c castor sugar
  • 2 t lemon rind, grated
  • 4 eggs, beaten

Directions
  1. Microwave juice and butter on high for 1 1/2 minutes. Whisk in the sugar and lemon rind. Add the beaten eggs. Microwave, on high, for 7 minutes. Whisk well for 1-2 minutes. Pour into hot, dry, clean jar

Sounds delicious, I don't use microwaves but can figure out how to melt everything on the burner lightly.

Fantastic! Should I put the eggs while it`s hot or when it`s already cold?


How long does this keep? and it must be kept in the fridge, right? I'm trying to make Christmas gifts, and I have a ton of lemons and I just stocked up on butter.
