  • Microwave juice and butter on high for 1 1/2 minutes. Whisk in the sugar and lemon rind. Add the beaten eggs. Microwave, on high, for 7 minutes. Whisk well for 1-2 minutes. Pour into hot, dry, clean jar

    How long does this keep? and it must be kept in the fridge, right? I'm trying to make Christmas gifts, and I have a ton of lemons and I just stocked up on butter.
