How to make it

  • Preheat oven to 350 degrees
  • Mix all cake ingredients together, blend at medium speed for 2 mins.
  • Put in greased & floured bundt pan.
  • Bake for 50 minutes.
  • Cool in pan for 15 minutes, then turn onto a plate and cool completely.
  • Blend all frosting ingredients and beat until thickened ~ about 5 minutes (works best if you put the bowl & beaters in the freezer for a while before putting the ingredients in).
  • Cut cake into 2 layers.
  • Put frosting between 2 layers - reassemble and frost entire cake.
  • Keep refridgerated

    Through the years, I have made this recipe dozens of times for Christmas and St. Patrick Day get togethers. However, I always made it in a 9x13" pan and cut it into squares. It was always a big hit! I do love the idea of making it in a bundt pan and decorating it to look like a wreath. Thanks.

    Recently I decided to use cool whip to make the icing instead of getting out beaters, etc. It tasted almost as good and shortened prep and clean-up time-- a bonus during busy holidays. No one complained or seemed to notice the difference.
